Tonight is the start of the eight-day holiday of Chanukah (Or Hanukkah depending how you’d like to spell it). The holiday celebrates the re-dedication of the holy Temple in Jerusalem after it was destroyed.
The holiday is celebrated on the 25th day of Kislev on the Jewish calendar. In the temple they found only enough oil to kindle the temple light for a single day. But miraculously, the light continued to burn for eight days. Because oil is a focal point of the holiday, it’s also tradition to eat foods cooked in oil such as doughnuts and potato pancakes called latkes.
