Even though I don’t celebrate Christmas, it’s still one of my favorite holidays. Especially Christmas Eve dinner. One of my best friends growing up was Italian and I was always invited to their house for Christmas Eve dinner, where fish was served. The Feast Of Seven Fishes is an Italian Christmas Eve tradition, where seven different fish dishes are served. To this day, I spend every Christmas Eve with an Italian friend at a restaurant enjoying a fish for dinner. Here’s a simple recipe which can be made for Christmas Eve or any other time of the year.
This recipe makes 4 servings.
2 tablespoons olive oil
1 onion, thinly sliced
2 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes
1/2 cup black olives, pitted and sliced
1 tablespoon chopped fresh parsley
1/2 cup dry white wine
1 pound cod fillets
1.In a large frying pan, heat oil over medium heat. Saute onions and garlic in olive oil until softened.
2.Stir in tomatoes, olives, parsley, and wine. Simmer for 5 minutes.
3.Place fillets in sauce. Simmer for about 5 more minutes, or until fish turns white.
