If you have The Cooking Channel on your cable line-up, check out the new show hosted by Emeril Lagasse sometime. It’s all about making great food at home in no time , and the title of it is Fresh Food Fast with Emeril Lagasse. I’ve noticed that a lot of the star chefs at Food Network have shows on the channel, and there are many shows with new chefs on The Cooking Channel as well.

I saw his show last night in the TiVo, and wow, he’s still got it! He did a killer dish that’s great for summertime. It’s Cantaloupe with Arugula and Prosciutto. You can put it together in about 5 minutes. Really. In fact, it looked so stunning on TV last night, I’m eating it right now. Gee it’s delicious! Here’s a photo of my plate. Yum!

Here’s what you need to make it happen for one large serving or two appetizers:

  • 2 slices of  Cantaloupe
  • A couple of handfuls of Arugula
  • Olive Oil
  • Sea Salt (fine grind)
  • A lemon
  • 2 slices of Prosciutto di Parma (or any good prosciutto, ask for a taste before you buy)

First, put the Arugula into a bowl. Drizzle it with Olive Oil and toss in some Sea Salt.  Squeeze a little of the fresh lemon juice onto it and let it sit for 2 seconds.  Then, cut the rind away from each slice of cantaloupe, and put the whole slices of  fruit onto a plate.  Drape a slice of Prosciutto onto each slice of melon.  Make a little hill of Arugula on top of it each one.  Sit down with a knife and fork and a napkin and enjoy your meal.  Bon Appetit!
