Sustainable food preparation happens long before a cook gets involved. It’s about where the food comes from and how it was grown or prepared. Are the vegetables organic? Were any animals grass-fed and humanely treated? Akasha treads so lightly on the earth that the restaurant seems to float.

Is there anything more earth-friendly than recycling?
